4oz 114g Butter
12oz 340g Flour
6oz 170g mixed fruit
2 Tablespoons dark treacle
4 pieces preserved ginger, chopped
Soak the fruit in tea overnight.
Next day, drain most of the tea.
Rub butter into the flour until like breadcrumbs. Add fruit, eggs, ginger and treacle and mix.
Spoon into small bread tin and bake in oven at 180 degrees (160 for fan assisted)/ Gas Mark 4 for one hour, or until a knife comes out clean.
